Ingredients:
- 1½ Cups long grain / Jasmine Rice
- 5-6 Swiss chard Leaves
- 1 Cup Fresh Parsley Chopped
- ½ Cup Cilantro Chopped
- 1 Large Onion Chopped
- 1 Teaspoon Crushed Garlic
- 2 Cups Vegetable Stock
- 1 Cup Coconut Milk
- Salt To Taste
- Freshly Ground Pepper To Taste
- 3 Tablespoons Olive Oil
Accompaniments:
- 1 Grilled Red Pepper
- Sour Cream / Full Cream Yogurt
- Halloumi Cheese / Paneer
