Mexican Green Rice

Ingredients:

  • 1½ Cups long grain / Jasmine Rice
  • 5-6 Swiss chard Leaves
  • 1 Cup Fresh Parsley Chopped
  • ½ Cup Cilantro Chopped
  • 1 Large Onion Chopped
  • 1 Teaspoon Crushed Garlic
  • 2 Cups Vegetable Stock
  • 1 Cup Coconut Milk
  • Salt To Taste
  • Freshly Ground Pepper To Taste
  • 3 Tablespoons Olive Oil

Accompaniments:

  • 1 Grilled Red Pepper
  • Sour Cream / Full Cream Yogurt
  • Halloumi Cheese / Paneer
